Allow specific role to edit their profile once approved to do so. My main sticking point is when a person logs into the site, they'll see the standard WordPress links (see attached image). Will my newly created page that allows people to edit their profile from the "front end" override these links? Or will they stumble into the "back end" of WP somehow?

The black toolbar at the top and the edit profile link in it is a WordPress' built-in feature.
The user profile edit page that you have created using the Toolset plugins won't affect the WordPress' own toolbar or the profile edit page.
To deny access to WordPress' admin area, for specific user roles, you'll either need to add some custom code or a third-party plugin. Here is a useful guide on the topic:
