I am trying to:

Fix a but where toolset is adding a \ whenever the user form loads a profile with a '

This doesn't happen in WordPress but the Toolset User Form adds it whenever updating a user profile from the CRED form.

I expected to see:

The correct value of Michael's Name

Instead, I got:
Michael\'s Name

This is known issue to us and we already file internal ticket and our devs will look into it as soon as possible.

For now, you may would like to downgrade the Toolset forms plugin version to working version.

What is the working version? We've just set up the site so I'm not sure what version I should be installing.

You should downgrade to Forms version 2.6.6 - you can download the form's old version from the following link:
