This thread is resolved. Here is a description of the problem and solution.
Problem:
The customer inherited a site using an older version of Toolset with the legacy Views editor for the directory page's search and layout. When trying to export the settings and data from the old site to a new one, the Views were not available on the new site, and the Professional Profiles data was missing. The customer wanted to know how to add Views or use another method to easily set up the new site using Astra and Beaver Builder.
Solution:
The legacy Views editor was likely disabled by default on the new site. To resolve this, it was suggested to enable the legacy editor in Toolset > Settings, which allows the Views menu to be displayed. The customer was then guided to use the Toolset Module Manager plugin to properly export and import the Types and Views configurations from the old site. This process successfully restored the Views on the new site. The customer was also advised on how to use Beaver Builder for designing content templates for their directory using Toolset.

I was hoping to export the settings and data from the old site into a new one I'm building but after the install of the new version, there is no View option and there is no Professional Profiles data either.
Is there any way to add views or use something else in it's place and easily set it up? The new website is using Astra and Beaver Builder as the editor.
I suspect the older site uses the legacy editor for Views.
By default on a new site when you install Toolset Blocks the legacy Views editor is disabled.
You can enable it at Toolset > Settings (you can choose the option to show both the new and legacy editors).
On the old site you can go to Toolset > Export and Import and export the Types and Views configurations and import them to your new site.
That should import the data structures for your post types (I assume that's what Professional Profiles is), as well as your existing—legacy—Views.
(It doesn't import the data, though, i.e. the professional profile posts themselves, for which you would need to use an export/import plugin.)
I don't know what the setup is and how you are developing this, but it may be easier to use a plugin such as All in One WP Migration to move everything from the old site to the new site. That would overwrite anything you have done on the new site already, which you would need to be re-done, but that may be simpler than the alternative, depending how far down the road you are with the new site.
I enabled the legacy views editor and then re-imported but the view are not showing. Perhaps there's another way to export Views?
In regard to the data, that's not much of a concern. There aren't a ton of records and I can do it manually.
As for go a migration, I'd rather not do that as I've built a lot of the site so far. This option would be a last resort if it had to happen. However, if I had to go this route, when I apply the license and then complete any upgrades to Toolset, will that damage the old settings, layout,field, etc.? As I mentioned, I inherited this site so I'm not sure how out of date the Toolset plugins are but I have to assumed, they're pretty far out of date. I've included a screenshot with the plugins and versions for your reference.
One other question, the old site appears to have been using WP Bakery for the layout for the directory. Do you have any tutorials on how I can layout the search section, the layout of the results and the full profile description using my editor (Beaver Builder)?
You're able to define a content template for your views and use your page builder to design the content template.
Please try these steps:
1) Dashboard-> Toolset-> Settings-> General:
In section "Editor to use for Content Templates", enable option "Beaver Builder"
2) Dashboard-> Toolset-> Content Templates, edit/add a new template, there is a button "Beaver Builder" when you're editing existing templates, click it, you can design the content template with "Beaver Builder"
