I'm trying to adjust the custom post type on the customizer (instead of using Elementor as a template), and realised that I can't find the post type on the theme customizer for both Kadence and Blocksy

The customizer detected the other post types though. Any thoughts? Here's the post types on the site, created with Toolset. Is it because the post type was created previously and used Views? Appreciate your help, Luo Yang! Xie Xie!

Since I don't have "Kadence" and "Blocksy" in my localhost
I suggest you try these:
in your screenshot:

Open two browser windows, each window edit one custom post types:
- Courses
- Test-courses
Compare the options of above post types, make sure "Courses" uses the same option as "Test-courses".
There might be some different option setting in above post types, and conduct the problem.

I'm not sure if its a reserved word with WordPress.
I just tried out by creating the same custom post type (courses) on another site and it doesn't show up on the customizer. This issue occurs when the Custom Post Type is named 'Courses'. I tried it with two different slugs, 'courses' and 'course', and both don't show up on the Customizer

However, if I used a different CPT name, like Programmes or even Courses v2, it works.

In Toolset side, "Courses" isn't a reserved word, and it is not in WordPress Reserved Terms list too:

I suggest you check it with the "Kadence Pro Theme" and "Blocksy Pro Theme" author.
