I am trying to: Is it possible to use individual fields on the product side for the customer? So that the product can personalize with fields such as date, text etc.?

2. You can use Toolset WooCommerce Views plugin to modify WooCommerce Archive and product pages. Please download WooCommerce Views plugin from your account:

I want the customers to customize the product on the product page. For this, fields such as date, drop-down or text lines should be displayed on the product page. These are then to be transmitted with the order.
