Is there any documentation that you are following?
Standard toolset docs, using %%CAPTION%% and %%TITLE%% as specified.

If you can bear with us this will be fixed in the next version which we're expecting to release next week.
We are splitting out gallery and slider blocks from the current repeating field block, and the options will look slightly different with the new gallery block (see screenshot).
You'll have more control over the captions, and be able to choose from static text, a dynamic source (e.g. post title), or the values from the media library.
You can see that in the currently available betas, except the final option isn't working correctly in the betas, but it will in the final release.
