I've set up custom font colours for all device types. They appear correctly on desktop, however, for mobile / tablet the font colour is not white. The settings are not being applied.

Hello,

I have tried the URLs you mentioned above with my mobile phone device(Android 10), it works fine, I get same results as my desktop device, I can see the font color is white without any problem, see my screenshots.

Where can I see the problem you mentioned above:
for mobile / tablet the font colour is not white

And there are lots of JS errors in your website, for example:

I suggest you check the compatibility issue in your website, for example:
deactivate all other plugins, and switch to wordpress default theme 2021, deactivate all custom PHP/JS code snippets, and test again

This did not resolve the issue. I've also attempted to recreate this and the settings for mobile do not get applied.

To avoid more misunderstandings, please elaborate the questions with more details.
for mobile / tablet the font colour is not white
Are we talking about the text "Whilton Marina" in below screenshot: white-text.JPG

If it is, see my screenshot, it is taken from my Chrome browser of desktop device(Windows 10), I see the same text color as in mobile device.

Please provide detail steps to reproduce the same problem. thanks
