Hi, I tried to spot the issue on the server, as well our Server Admin had a look.
We could not spot anything.

You seem to experience the same issue as this user:
https://toolset.com/forums/topic/unable-to-assign-custom-taxonomy/

This is why we will dig into this to be sure that there is nothing left missing on our end.
Usually, Server issues cannot be solved by us, but it seems here that some very specific settings may provoke this.

So we need to know if this is a problem of the servers, or of Toolset.

Since the issue cannot be replicated locally on any of our Servers, or on Discover Sites, this seems to be a particular Server problem shared by the servers you both use.

They are different (settings) of each server. But - it may be that both do not support certain things, or have some single settings in common that break Toolset.

To know this, since we cannot replicate this locally, we need to know more about your servers, settings and site setup.

As well I would like to invite you to use MAMP or WAMP (they are free) to test the issue locally on your machine.
It should show immediately the issue gone.

The information I will need from you is:
- Who administrates or provide the Server? Is it company we can reach, or something else?
- Can you confirm, that each of these points is supported:
https://toolset.com/toolset-requirements/
- Can you please prepare a PHP Info as outlined here:
https://toolset.com/toolset-requirements/ > https://toolset.com/toolset-requirements/
Then, share that URL with me

Thank you!

Thanks all, it was the multibyte string issue. Although the taxonomy still isn't showing under the post in the admin menu, I'm not too worried about this. Thanks again, cheers, Steve.
