In Woocommerce you can create many types of products and not necessarily all of them will need new fields created with types.
How can you create fields with types only for a category of woocommerce products and that are not shown in all the products?

Yes, it is possible, you can try these:
Edit the custom field group, in section "Settings for YOUR FIELD GROUP", click "Edit" button after "Appears on", click tab "Taxonomies", there you can setup the specific term. see screenshot appear-on.JPG
Then after you save the post with specific term, your custom field group will be able to display in admin side.
I have done what you have told me, I have assigned my group "ProductosRibbon" only to the product category "Ribbon", but my group of fields "ProductosRibbon" continues to be shown in the products in which that category is not selected.
I attached some screenshots in which you can see the problem.
This issue is in our to-do list as a bug report, our developers will take care of it, I am not sure when it can be fixed, but I can update here if there is any news.
I would like to update you that the fix for this issue has been shipped with Views 2.9.1 and Types 3.3.4 release.

Could you please update ALL Toolset plugins to it's latest officially released version. You can download the latest plugin release from your accounts page and try to resolve your issue.

I have installed the new versions of Views, Types and WooCommerce Views, but it seems that the problem is still there.
I create a product, I put a different category to that of the field group "ProductosRibbon" and the group continues to be shown in the new product.
Do I have to do something else to make it work properly?
