An event with multiple talks and multiple day - want to allow dates set in event

I am trying to: create many to many relationships through different post types:

Events - with single events but multiple dates e.g. day one, day two, day three (note this has to be dates fields)
Speeches - which then need to associate with an event and a single day (so once an event is created the I can choose on the post which day/date the speech is delivered
Clients - each event belongs to a particular client
Venues - Each event is associated with a venue

I visited this URL: just trying to build the backend relationships
I created an post fields which had multiple date entries but then in a speech I couldn't associate the date only choose the event

I expected to see:
