After the Update i create a new Blog Post but the only thing what shown is the Title Picture and the Title

Have you tried clearing all involved caches, especially from the server and/or the CDN side?
( if your website is using a CDN service like Cloudflare etc )
To troubleshoot this further, I'll suggest the following steps:
1. Please ensure that WordPress, active theme and plugins are all updated to the latest versions.
2. It would be interesting to test this with all non-Toolset plugins disabled and a default theme like Twenty Twenty-One.
If it's fixed, you can start adding the disabled items, one by one, to narrow down to a possible conflicting one.
3. In case the issue still persists, I'll need to see how these blog post pages are set up in the admin area. You're welcome to share temporary admin login details along with an example of the affected post page.
Note: Your next reply will be private and making a complete backup copy is recommended before sharing the access details.

I noticed that currently a template named "Template für Beiträge" is assigned to a post type 'Posts'

Note: You can go to 'WP Admin -> Toolset -> Content Templates -> Usage for single page' and see which content templates are assigned to which single post pages.
Using the "Change Content Template" option from the content template screen you can unassign that content template from posts, and the regular layout/template for the posts will be used.
