That video was based on the legacy Views editor, rather than the block-based editor which is the default when you install Toolset Blocks.
Although Toolset Blocks and Views are essentially the same plugin, the legacy UI is disabled by default in Toolset Blocks.
You can enable it by going to Toolset > Settings and under Editing Experience choosing to show both the Blocks and Legacy editing experiences.
At the moment creating Views using the block editor isn't supported if you intend to add the View to a page published using Elementor. In that case you would need to create the View using the legacy editor.
If the page you are adding the View to doesn't need to be made with Elementor, the most user-friendly editing experience is likely to be using the block editor to publish the page, from where you can add a View block to create your search View.
