I can't tell what the problem is.
I can see the debug info in the console in your screen recording, and it seems to confirm that having saved the post meta you then retrieve the post meta which has the correct value.
But, look at the screenshot.
That's what's in the database.
Seemingly the data which your debug info shows is correctly saved to the database, is then deleted from the database.
I can't see how or why that would be happening.
To identify why it would be necessary to rule out interference from any other plugin, or code from the theme, or any other custom code snippet, to try to isolate why.
