yes - check with minimum setup (simply disabling plugins and using wp 2017 theme).
As I already shared video - I do not see there is the issue, I again tested and it just works fine. See the video:

Well - this is really strange. As you already know I shared video from of my test install and the select2 field just works fine.
The only way to debug this is to have duplicator copy of your site. Could you please share duplicator copy of your site, that will help me to install your setup on my test server and I will try to reproduce the issue there. Please share page URL where I can see the issue.

I also have this exact same problem on a completely different installation. both of these installs are "staging" sites on wpengine, could this have something to do with it?
As I mentioned earlier, wpengine does not allow the installation of the duplicator plugin for security reasons.
Let me contact them and see if there's an alternative.
