I would like to edit my view templates from my favourite editor, I noticed in the intro video you are editing them from the wordpress admin.

So the question is: do I have the choice to manage all my view templates by just adding them as php files, or do i HAVE to go through the wordpress admin?

You can manage all view templates in wordpress admin side, output them to frontend by both way:
1 ) adding them in php file

The reason I am asking is because I think a lot of people dislike working with templates like this without syntax highlighting and having to use the browser.

Yes, you need make the Views templates in WordPress admin side
