I am trying to: When Toolset Blocks is activated, the BLock Editor stretches to "full width" even though I do not have the Adjust Editor to Maximum Width activated.

Normal Block Editor alignment
Instead, I got:
Full stretch even beyond title

Actually, we can consider this a usability issue we need to address. That Adjust Editor Width setting is ineffective when you have the setting shown in the screenshot enabled.
I'm discussing this with the developers at the moment, it's something we need to improve.
In any case, for now, changing that setting will respect the theme's content width while working in the backend (assuming the theme provides backend editor styles).
I don't have access to your site any more, but I installed the Blocksy theme on a test site, and it works when you have both settings applied, as shown in the screenshot.
If it is not working for you, can I get more details? What is not working?
