Tell us what you are trying to do?
I am trying to create a search form that has the default values empty.

Is there any documentation that you are following?
It is similar to this page, but I don't know how they fixed it:
https://toolset.com/forums/topic/how-to-have-an-empty-value-in-select-box/

What is the link to your site?
It is on this page:

Hi,

Thank you for contacting us and I'd be happy to assist.

Please open the edit screen of the view used on the page and you'll see the 3 instances of the shortcode "wpv-control-postmeta" for the custom field search filters in the "Search and Pagination" section.

To include an empty first/default option, in these search fields, you can include the "default_label" attribute in those shortcodes:
( ref: https://toolset.com/documentation/programmer-reference/views/views-shortcodes/#wpv-control-postmeta )

[wpv-control-postmeta default_label="-select-" ......]

I hope this helps and please let me know if you need any further assistance around this.

regards,
Waqar
