-- Tell us what you are trying to do?

Create a new view to show a CPT and display it on an Elementor Page. Previously I used to create the view but now this is exclusively using Gutenberg I'm confused where I first create the view. I ended up creating a new blank page just so I created the view on that. Once I've done that however, how do I edit the view in the future and safely delete the test page? This page has no utility outside of creating the initial view, as I couldn't see a way to create or edit it directly unless it's on a Gutenberg page?

-- Is there any documentation that you are following?
Official Docs, but they seem to be focused on building exclusively with Gutenberg so not finding helpful.

-- Is there a similar example that we can see?
n/A

--What is the link to your site?
No, dev site.

Hello,

Toolset Blocks is based on WordPress blocks editor, which is a different page builder from Elementor page builder, it is not recommended to use two page builders to design the same page/post, see our document:
https://toolset.com/course-lesson/using-toolset-with-elementor-page-builder/#Limitations-when-using-Elementor
section "Limitations when using Elementor and Toolset templates together"

In your case, I suggest you try to setup the post view with classic editor, for example:
1) Dashboard-> Toolset-> Settings-> General, in section "Editing experience", enable option "Show both the legacy and Blocks interface and let me choose which to use for each item I build".
2) Dashboard-> Toolset-> Views, setup the post view with classic editor, and display the post view in Elementor page builder:
