Hello,

Please edit the post form you mentioned above, find and select those relationship fields, change the option "Select text" value, see my screenshot Select-text.JPG

If you are using expert mode to edit that post form, you can setup the shortcode attribute "select_text" manually, for example:
[cred_field ... select_text='Choose one' ...]

More help:
https://toolset.com/documentation/programmer-reference/forms/cred-shortcodes/#cred_field
select_text
Optional. Text for required parent selection. Can be set when inserting Parent Post Selectors in Forms Builder.

I solved it with "expert mode" but I need a further clarification.
Why if I expand the select field (in post form edit) I don't see the same options as in your example?

The screenshot I provided above is for relationship field.

For the custom select post field, I have tried it in my localhost with a fresh WP installation + the latest version of Toolset plugins, but don't see the problem you mentioned above.

In the post form, the custom select field display same as the custom field setting, it does not output the "--- not set ---" option, see my screenshot select-field2.JPG

In this case, you can add an option into that custom select field, with empty option value
