Using Toolset you can build sites of any domain but as Toolset is scalable at some point you will have to use your own custom cod or functions or plugins that help you to achieve your needs.

You may be able to build something comparable with Toolset, but it would be quite a bit of work.
The first and critical step is to decide the structure of the site that involves post types, taxonomies, custom fields, post-relationship and that you will have to decide with what structure you would like to go with as we do not offer any blue print on structure as if we may offer and on later statue if it might not work for you, that will be the biggest problem as you will be the best person who will know the system and input and output of it.
In general - I would then say that if they did want to use Toolset then they would likely need to create a hierarchical post type for each tracking stage(or repeating field group). They could then string together as many child posts as necessary to make a chain of stages. They would probably use a post relationship to connect the start of the chain to, customers, products, whatever.
We can explain how the parts of Toolset work, and we can give some broad outlines about how you might approach a project but you will have to decide on the details.
