I understand in wordpress you can use a youtube video in posts without issue as the featured image.

I would like to be able to use this feature in my toolset custom post types were video is available. Only a handful have video. So I need to be able to use normal featured images most of the time.

The tutorial video you linked to is somewhat misleading, in that this has nothing to do with WordPress featured images, and instead relates to the WordPress post format functionality.
In the video the tutor does not add a featured image, he simply includes a video URL in the post content and specifies the post format as Video.
The theme he uses displays video format posts in a particular way (the playable preview shown on the front end), but other themes may not. (On my test site that uses the default twentytwentyone theme, for example, it has no such special handling of Video format posts. He is using Divi theme. Other themes will have variable results.)
As far as making this possible with custom post types, in the settings for your custom post types you can specify that the Post Formats option should be displayed in the post editor. You will then be able to mark posts as Video format posts. But how those appear on the front end is wholly dependent on your theme.
