I have created my own category (German: Kantone) with Toolset, which I would like to translate into French (cantons) with Polyang.
Another problem is translating the word ‘All’. I can't find out where it comes from. I would like to translate it into German (Alle) and French (Tous des).

What I can say is that when you register custom taxonomies with Toolset, it is just the same as registering custom taxonomies using the core WordPress functions to do so (see https://developer.wordpress.org/reference/functions/register_taxonomy/), but you get to do so through the UI instead of using code.
You could disable Toolset and instead register a taxonomy with the same options and settings with code, in which case I would expect Polylang to be able to help you.
Looking at the page where you want to translate "All Kanton" to "Alle Kanton", I can see from the markup there is a search form (screenshot), but it is not a Toolset search form (the markup is different). What do you use to create that search form?
You should check how it generates the option labels (especially the default unselected option for all kanton) to confirm that it is possible to translate them, and between them and Polylang they should be able to tell you how to translate them.
I could tell you what would be required to translate the labels in WPML, but that won't help with Polylang.
Thanks for the quick feedback. The search form is created with the plugin ‘Search & Filter PRO’. If you have any tips or ideas, I would be grateful. Otherwise I'll have to look elsewhere.
(This is a smaller web project, so Polylang is in use, next time I will use WPML for sure).
