I still need help:

1) The categories are still only shown in the preview.

I tried to fix it with your tutorial, but it did not work.

What meta you refer to? Do you mean the post title, author and date displayed just below the naviation menu on left side? What meta you want to hide/remove?

To hide the post meta and title information on the single post:
- hidden link

- Go to Appearance > Customize
- Custom post types > Netzwerk > Single Netzwerk > Mitglied im Netzwerk Title Area
- Under the "Structure" section Disable the Title and Meta option and saved the template
