Hi there

Am I right in thinking you created this with the legacy Views editor?

If you place the cursor inside the wpv-control-postmeta shortcode responsible for generating the dropdown (in the Search and Pagination editor of the View) and click the Edit filter button it will bring up a dialog where you can enter placeholder text for the first empty option, as shown in the screenshot.

(Or edit the shortcode directly and add an attribute such as default_label="Choose an option".)
