I updated my site to php8 for a critical warning issue (was 5.6). When I did and then tried to update plugins, updating views caused critical error. So I rolled back to php 7.4 but still am unable to add views without critical error. Have deleted the plugin and re-added as well as trying different versions, but still no luck.. any help would be greatly appreciated.

Toolset plugins are not fully compatible with PHP 8 and that is known to us and our Devs trying hard to make it fully compatible and very soon we will try to release fully compatible Toolset plugins version with PHP 8.
But there is no issue with PHP 7, if you already migrated to PHP 7, can you please share problem URL where you added view with all required details whats not working and admin access detials.

I would also eventually need to request temporary access (WP-Admin and FTP) to your site. Preferably to a test site where the problem has been replicated if possible in order to be of better help and check if some configurations might need to be changed.

It seems to me that on your server there is not enough permission to upload the files somehow. I tried to install file manager also and uploaded the view's zip there but when I try to extract it, it shows error.

I tried to login using FTP but the FTP access details is not working at this end so I could not able to check error or server logs.
I even tried installer to install the Toolset plugins but thats also keeps running and running:

Please check with your hosting authority whats causing this as it seems to be server issue, otherwise we will have thousands of tickets if no one able to upload the plugins to server.

Toolset requirements all seem to be above what is needed.

If you able to open gate for FTP, I will try to upload the plugin files using FTP, even you should try to upload the Toolset Blocks or Toolset Views plugin files via FTP and then try to activate the plugin from plugins page.
I have unlocked FTP for 24 hours for you which will hopefully work now.
I have also looked in file manager just now and views seems to still be there despite not showing up on the website now. It's in wp-content>plugins>types>application>views and I'm wondering if that is causing the problems.
The error is inconsistent on your site. I've tried to upload whole Types/Views plugin using FTP and good news is that I'm able to activate the Types and Toolset Blocks (views) plugin successfully.

Everything works normally until the Layouts plugin deactivated. As soon as I activate Layouts plugin, the problem starts to reappear inconsistently.
I do not know if you are using Layouts with your site. If you are using it, Can you please make full backup and delete the Layouts plugin and try to upload whole layouts plugin using FTP or using plugins page and check if you make it work.
