I have a view with the following fields: a title field, and two special fields: start date and end date

I am having issues with the time stamps, right now I have them as ascending, but I had to unpublish posts with start and end dates that are 2019, and 2020...in other words I need to be able to archive anything that has an end-date of 2019 and 2020, however, the posts from 2019, 2020, and 2021 were all posted in 2020, I hope this makes sense

The link you shared is not working at this end and I see the message "This page doesn't seem to exist.".

Based on the information you shared, it seems you created a view and you only want to list the post belongs to specific year that is 2021 - is that correct or you want to display only future post (having said that post belongs to future date)?

If you can share with example what you want to display and where with problem URL it would help me to understand your issue and guide you in the right direction.
