For example, if a user changes the date for a visitor, is it possible to get the original date in the notification, so that we would know which date to cancel the visitor parking for?

Unfortunately no, there is no way to get what the original value is in the notification. We can only get what the updated value is since the notification is triggered after the field has been updated and saved.
