Toolset Access seems to set access control for fields group and NOT for individual field. Am I right?
Among the custom fields that I create for the CPT, I want to set only one field (slug: phone) visible to a specific role. All other fields can bee seen by public.
How can I make it possible?
Yes, that's right, only the Field Group can be controlled by Toolset Access as a whole.
To achieve what you mention you need either custom code that we cannot provide here in the forum or, you would need to create another, separate Custom Field Group to control it by user/user role.
