I have two post types for a restaurant website: food-items and menues. Food items are all dishes existing (e.g. french fries, steaks, salads...whatever). Menues are simple names e.g Dinner Menue, Chefs Suggestions, Daily Menue etc. Logically I have set up the post type Menue as the parent post type of food items. Like this I can associate in the backend one food item with one Menu or add new food items to the menu. But I can´t add existing food items directly to the menu - how can I make this happen ?

It's not possible.

The Current Stable Toolset lets you add new Child Posts, but not choose new Child Posts when in a parent post edit screen.

This is only possible in the new Toolset Beta which is available in your Toolset download area - but that is a beta version, which should not be used on live site, instead only on staging servers.

In future, when the betas will be released as stable, this feature will be native to Toolset.

Would it be possible to solve the problem via front end forms? Is there a time frame when the beta with the feature will be released as stable? Like this I could decide whether to dump the project or not 🙂

No, it's not possible either in CRED forms, it's even more restricted.

In the new beta and future releases thou this will be possible.

I would give it 1 months at least for the stable release to be fully finalized.
