Problem:
The issue here is that the custom categories display with the format Category: Test with the prefix Category: at the beginning of the taxonomy term name. The user wanted to remove this prefix

Solution:
This can be resolved by adding the following to your functions.php file.

function prefix_category_title( $title ) {
    if ( is_tax() ) {
        $title = single_cat_title( '', false );
    }
    return $title;
}
add_filter( 'get_the_archive_title', 'prefix_category_title' );
