The templates for Ebooks and Articles are working but the ones for Courses and Workshops are not. Why is that?

Well - I do not know your site history and how content templates are made.
The simplest thing is that - here you can see all the content templates:

Here is the list of templates that is assigned to display single post of your post type:
- lien caché
You can check what content template you want to display with what post type.
Also, the Designer/Developer you mentioned - did they created content tempalte using Toolset or its coming from the theme's file? You can check with them.
Maybe you can give me list of post types and tell me or share screeshot what is your expected result with single post of that post type.
The template for Training/Education Single is the correct template, and it is working for all the other Training/Education products but not for Courses or Workshops. What I don't understand is why it isn't working for those categories.
I think I just solved the problem. The templates for those two categories were tagged as "Dynamically assigned" When I set the template to none, it works.

Ok great - Awesome. That is why I wanted to show you those templates as I do not wanted to edit those conditions as I was not have any information on that if those conditoins are required or not.
Thank you for your help, but I may never update the Toolset plug in again. This is the second time that your update broke my website!!!

We always recommend running your site with the latest stable release plugin version.
But what you should do is - create a staging/test site first that should be 1:1 copy of your current production/live site. With this staging/test site you should go ahead and update the plugins first and notice if it breaks anything.
If you notice anything try to fix it or you are always welcome to ask for support for your issues. Once you see everything is working as espected then you should go ahead and update plugins on your production/live site.

As it turns out every single product is broken, not just the Internal Communications ebook. All are assigned the "Template Dynamically Assigned" -- and the descriptors are not appearing. So where are the templates that are dynamically assigned?

I gave up and went back to a backup version of my site before the latest Toolset update. I will never update again. Everytime you update it causes me a week of problems on my website.

You should go for staging site rather uipdating on the production site.
