I am editing a custom field group. When I click "Add New Field" and then "Choose from previously created fields," most of my previously created fields are not available to choose from, though some of the fields are. Searching doesn't find them. I have tried clearing the custom fields cache in WordPress settings and disabling my caching plugin.

I would also eventually need to request temporary access (WP-Admin and FTP) to your site. Preferably to a test site where the problem has been replicated if possible in order to be of better help and check if some configurations might need to be changed.

I see what you want to achieve. You want to duplicate the same Monday fields for Tuesday, Wednesday etc..etc..
There is no such feature to duplicate the custom field as custom field slug should remain unique.
I think better approach would be to create repeating field group.
For example, you have custom field "Hours Monday", "Hours Tuesday" intead you should create a repeating field group namely for example "Day Hours" (You can give any name as required) and within the custom field group you should add the field that holds the day name like "Monday", "Tuesday"... and another custom field that holds the hour value.
