I want to add additional informations in post relationship dropdown (custom post, admin section)

Is there any documentation that you are following?
with no luck (seems filter is never executed) https://toolset.com/documentation/programmer-reference/types-api-filters/#wpt_field_options

Sorry, which dropdown is it you want to customize?

If it is on the post edit screen in the post relationships metabox when you connect an existing post, then please check the following code snippet for details about how you can modify the titles of the listed posts: lien caché
