Whilst I appreciate the benefits of the new drag & drop feature for form design, on existing sites or when I want to achieve something this feature doesn't facilitate, is there a way of either disabling the slider (have it showing but ineffective) or hiding it from view? The reason? It is simply far too easy to accidentally do a mouse click just as you're moving across the slider and all the work in the expert mode window is completely lost.

Might I suggest a global setting for this under Toolset settings where we could choose to enable drag & drop for all forms, disable drag & drop for all forms or choose on a per form basis?

Well - you need to add the CSS that will be applied on admin section.

Please try to install and activate following plugin.
=> https://wordpress.org/plugins/add-admin-css/

Add following CSS to that plugin settings:

.cred-editor-expert-mode-container {display:none !important;}
