I just would like to know if it would be possible to list upcoming Seminars with the ability to book a place – i.e. the prospective attendee send an 'enquiry' email to someone at the company with the details of the seminar.

The question you asked have broader concept. To send inquiry you can use Toolset post form and Toolset post form also offers the feature to send email on form submit.

Yes, I think I'll follow similar to this: https://toolset.com/forums/topic/i-would-like-to-add-a-form-on-every-cpt/ (except I don't need to email the post author).

I'll have the seminar information in a row (Seminar Title, Venue, Date, Time Slot) then a button to call up the 'message' form. I guess linking the form to the button will be easy enough. I'll get back to you if I need help here.
