Basically want to send them access details once we have added their listing to our site and let them change pictures, rates etc. How do I do this, is there a Tutorial for this (if not could I recommend one, thanks). Still developing the site so can't share a URL, sorry.

Dear Antony,

1) send them access details once we have added their listing to our site
I suggest you try this:
a) Create a new user form with CRED for user to register in your website:
CRED User Forms
https://toolset.com/documentation/user-guides/cred-user-forms/
Here you can enable "Email notifications" to send the access details to user email

2) added their listing to our site
You can setup a new custom post type "listing":
WordPress Custom Post Types
https://toolset.com/documentation/user-guides/create-a-custom-post-type/

3) let them change pictures
You can setup a custom image field "pictures" to post type "listing":
Adding WordPress Custom Fields to Content
https://toolset.com/documentation/user-guides/using-custom-fields/
And setup a CRED form to edit the "listing" post:
CRED Post Forms
https://toolset.com/documentation/user-guides/creating-cred-forms/
Let your user to change pictures

Thanks Luoy, much appreciated. But if I could recommend to the Toolset team to please get some professional tutorials done, so that we the customers can fully utilise the awesome Toolset (seriously considering upgrading to the Toolset for Life). Yes it makes our lives easier by not having to code in PHP, but still has a pretty steep learning curve.
