Solution:
You can setup three custom taxonomy "Family", "Genus" and "Order", and register them to post type "plants".

I want to show a list of categories with their respective category field names

I've used the shortcode : [wpv-post-taxonomy type="category"] but it only displays a list of the fields. I can manually create a grid with the field names in one column and the list in the other column but that relies on each category only having one result and requires each column to be styled as out of the box they have different line height/ paddings etc.
