I've changed the taxonomy slug in URL from "product_brand" to taxonomy=brand.

I see.

Is there anywhere I can set this to be more convenient for my client to edit?

I do not have any way as I'm not sure how its broken or I do not think its caused by Toolset as I shared with the sandbox site where its working as expected. This must be cause by any unknown reason that is not known to you. You will have to check with brand new test site and check if its working as expected like the sandbox site I shared there must be some conflict.
