I have a custom post type, which I want to expire after 3 years (basically a user will pay for the right to have a document searchable on my website for 3 years). Is it possible in Toolset, that when a 'post' is input via the Post Form, that an expiry date is automatically added to the post which is 3 years after the date of the publish date?

Is there any documentation that you are following? I looked but couldn't find a suitable example

Yes toolset is able to handle post expiration however it will need to be enabled. I would recommend following the instructions in the link below in order to do this.
