Make Parent Taxonomy in a Dropdown Non-Selectable

I'm trying to set Parent Taxonomy non-selectable in a Dropdown

Is there any documentation that you are following?
I'm trying to reach this topic which seems resolved by Luo, but I'm not sure how to do it. 🙁

Actually, you can see the dropdown here,

inside the search field "Categoría profesional". I want to make the first field (PROFESIONAL) unselectable. I also would like to make unselectable the taxonomy when the user complete the form to upload the information.
