I would like to see if I - via Conditional block - can make a field that shows the actual opening hours every day.
Is there any documentation that you are following?

If you would you please give me more information on how the data is set up and what exactly you want to do with the opening hours?
So, do you have a custom post type? Most probably musium judging from the front end of the website?
And do they have a custom field called opening hours? And if yes, what is the field type?
Now, how do you want to show the hours? List of days with opening hours in a single post type page?
In general, I will need more ifnormation of the setup and what you want the front end to look like, and then I will be better positioned to help.
