I've been working on a staging site and creating new views and content templates. At the same time, the client has been adding / editing posts on the live site.

What is the best way to move my Toolset-related changes to the live site without affecting the live site's data?

You can export and import the structures created with Toolset from staging to live site using the Toolset Import/Export features and choose to not delete or overwrite existing contents when importing.
You can find these features in Toolset > Import/Export, or you can have a look a the Module Manager Plugin by Toolset, which allows you to craft "packages" with your Toolset structures and move them between sites

That's the only way to avoid a full overwrite by replacing the live site with staging site, or, recreating the staging contents manually on the live site.
