[Resolved] Recent Posts or Posts by Category Type "Excerpts" for Static Homepage

I'm trying to figure out how I can create my own "recent posts" or "latest blog entries" type excerpts to feature on a static homepage (consisting of a linked title, thumbnail of featured image, author name, published date, snippet of text from post, and a read more link)..
I've been somewhat successful in doing so, in that I've created a view that will display the title with URL, thumbnail, author name, published date, the Read More link, and I've been able to limit the number of excerpts as well (in this case to four).
But I'm lost on a couple of things:
How can I set it up so that only posts from a certain category are shown and how can I get some of the content from the post to show up without me having to create a manual post excerpt?
Ideally, I'd like to be able to set a limit on the number of characters that show up.
I know there are plugins designed to do this, but I'd rather have more control.
Not sure whether it matters or not, but I want to do this with regular WordPress posts, not custom post types.
