Hello,

I suggest you try these:
1) Follow our document to migrate your website to anther development site:
https://toolset.com/faq/how-do-i-migrate-a-wordpress-site-from-one-domain-to-the-other/

2) In the development site, change to new theme, here is the recommended theme list:
https://toolset.com/documentation/recommended-themes/

3) Switch to the latest version of Toolset plugins, you can download them here:
https://toolset.com/account/downloads/

In your case, you just need to install Toolset Blocks plugin, without Toolset Views plugin, and enable this option:
Dashboard-> Toolset-> Settings-> General
in section "Editing experience", enable option "Show both the legacy and Blocks interface and let me choose which to use for each item I build"
So you will be able to keep Views GUI

4) Then redesign the development website to what you want, and you can migrate it to the live website when it is ready.
