By default if you add sorting controls to a View block (or to a custom archive) they are added to the output section of the View block. If you drag them into the search section—so that they appear with the search filter controls—then they are not rendered on the front-end, and appear instead as shortcodes.
This will be addressed in the upcoming dev cycle.
